Day One

The great experiment (to me, that is).
Vegan Day One.

morning - It's late so I'll probably just have an apple/peanut butter
The plan for late lunch - wheatberry chili with cornbread (tofu instead of eggs)
Dinner - salad

Weight - high-ish, but acceptable

Thoughts - worried about eating more grains and less protein than I have been for the past four months. Certainly don't want to gain weight, but this experiment isn't about weight, it's about health.
